This Cookie Butter Cookie Recipe is an ideal treat to welcome the new season.

Ingredients:

•   1/2 cup cookie butter (I used Biscoff), room temperature

•   1/2 cup unsalted butter, room temperature soft

•   2/3 cup packed light brown sugar

•   1 large egg, room temperature

•   1 tsp vanilla extract

•   1 1/2 cups + 1 tbsp all-purpose flour (measured carefully, see notes)

•   1/2 tsp baking soda

•   1/2 tsp salt

•   Additional cookie butter for topping

Directions:

1.  Preheat your oven to 350°F (180°C) and prepare a baking sheet with parchment paper.

2.  In a large mixing bowl, cream together the softened butter, cookie butter, and packed light brown sugar using a mixer on low speed until the mixture is light and fluffy.

3.  Add in the egg and vanilla extract, mixing until fully combined.

4.  Gradually mix in the all-purpose flour, baking soda, and salt until the dough comes together.

5.  Using a cookie scoop (about 3 tablespoons per scoop), portion out the dough onto the prepared baking sheet, ensuring each ball is spaced about 3 inches apart.

6.  Place a small dollop of extra cookie butter on top of each dough ball.

7.  Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden and the cookie butter on top has crackled.

8.  Once baked, allow the cookies to cool completely on a wire rack. Enjoy your delightful treats!
